BANANA MOUSSE WITH A BANANA CRÈMEUX HEART AND BANANA MISO CARAMEL ON GÉNOISE SPONGE, COATED IN WHITE CHOCOLATE VELVET AND TOPPED WITH CARAMELISED BANANA.





A refined reimagining of Key lime pie — vibrant lime curd at the centre, layered with silky mascarpone vanilla cream and bright lime gel, enveloped in a delicate lime mousse. Set on a tender lime drizzle cake with a crisp crunch base, then finished in a velvet chocolate spray for a perfectly balanced dessert of citrus, cream, and texture.





A refined dark chocolate tart built on a crisp sweet pastry shell, layered with feuilletine chocolate crunch and vibrant blackberry curd, finished with a rich dark chocolate layer. Crowned with a glossy blackberry compote dome and encircled with fresh Raspberry for a striking balance of deep chocolate, bright fruit, and crisp texture.





Delicate coffee-soaked Joconde sponge layered with our signature chocolate ganache and crunchy pecan praline, finished with a light white chocolate mousse and whipped ganache. Garnished with roasted pecans for the perfect balance of richness and texture.






COFFEE CARAMEL CENTER FOLLOWED BY A VANILLA NAMELAKA, ENCASED IN A LIGHT COFFEE MOUSSE ON A INDULGENT CHOCOLATE SPONGE, SPRAYED WITH A CARAMEL CHCOCOLATE & A MIRROR CHOCOLATE GLAZE.





A refined chocolate and lime tart layered with a crisp chocolate sweet pastry shell, a rich chocolate feuilletine crunch, vibrant lime curd, and finished with a silky lime crémeux. A perfect balance of deep cocoa notes and bright citrus freshness in every bite.
